Grow Your Own #10 : Arugula & Golden Beet Salad

This is my first time participating in Andrea's Recipe's monthly Grow Your Own event. It's an opportunity for bloggers to showcase food they have grown. My recipe features arugula and chives from our garden. The weather has been chilly and overcast but that doesn't seem to bother the arugula and the chives. I've got plenty of each and they were begging to be included in a beautiful and tasty dish. I was on hand to oblige and whipped up a great salad.

3 handfuls home-brown arugula (very healthy)
1 large golden beet, roasted then diced (also very healthy)
1/4 cup onion, thinly sliced
1/4 or so feta cheese, crumbled or cubed
2 tbsp extra virgin olive oil
2-3 splashes of sweetened rice vinegar
1 tbsp or so snipped fresh chives
salt and pepper to taste (taste salad first before salting because feta is very salty)

Gently toss all ingredients together and serve. The sweetness of the beets and the rice vinegar help temper the peppery sharpness of the arugula. Simple. Delicious. Healthy.

Your salad looks devine. I never tried arugula and beet together. I'll have to give it a go.

Thanks, Andrea. I think baby bok choi is next for GYO. It's already bolted so that makes up my mind for me.
