Fresh mozzarella, tomatoes, basil. Does it really matter how it's all put together? Not to me. Buy the mozzarella pre-sliced. Makes this dish come together in minutes. Besides, slicing fresh mozz is a messy ordeal. I usually end of smashing it all because the cheese is so soft.
In a bowl I toss halved cherry tomatoes, torn fresh basil, a small cucumber - peeled, seeded, and diced - a drizzle of olive oil and a squirt of fresh lemon. The cuke isn't part of the traditional Caprese but K & R grew it in their garden and it added a fresh crunch. Don't forget salt and pepper. Then I scoop it out over the layers of cheese. Caprese in ten minutes.
