Cool Cucumber Salad

Cucumbers. Cool and crisp. A wonderful addition to many different kinds of salads. But this recipe features cucumbers tossed with a sweet and zingy dressing. Salad:
  • 1 English cucumber, thinly sliced
  • 1/4 cup diced red bell pepper
  • 1/4 cup shredded carrot
  • tbsp minced shallot
  • tbsp minced cilantro
Combine all ingredients and toss to evenly distribute. Dressing:
  • 2 tsp toasted sesame oil
  • 2 tsp honey
  • 2-3 tsp mirin
  • 1 tsp rice vinegar
  • 1 tsp vegetable oil
  • juice of one small lime
  • salt to taste
Combine all ingredients. Toss with salad. Serve chilled. Try these optional ingredient ideas:
  • red chili flakes
  • crushed peanuts
  • flaked, unsweetened coconut
  • thinly sliced scallions

How wonderfully refreshing. I think I will add the red chili flakes to my dressing. Thanks for the great recipe!

Dragon, great idea! I usually add hot stuff to my own plate too. Love the heat!
