When It's Too Hot To Cook
During the heat waves of this summer, I tried to make meals which required no cooking. Many nights that meant bringing home sushi or just a few side dishes from the deli. I did manage to put together a few things on my own. This salad was one of them. It's your typical "fiesta" salad: roasted corn, white beans, black beans, diced sweet peppers, diced chili peppers, tomatoes, diced white cheddar and basil (I didn't have cilantro in the house). Olive oil, a dash of salt and a sprinkle of white wine vinegar and that's it. Toss and eat.
