This is a fast way to get veggies into any meal or just to have on hand as a snack. I make a giant bowl of this salad and it only lasts two days. That crunchy snap with the savory toasted sesame and bite from the fresh ginger are hard to resist.
I buy a big bag (or two) of snap peas which are already cleaned and relieved of their strings. These go into a very large bowl along with:
- a teaspoon of toasted sesame oil
- at least a heaping tablespoon of fresh ginger, minced (or diced or grated)
- a small clove of garlic, minced
- a sprinkle of sesame seeds, to your liking
- a heaping tablespoon of Fresno chile, diced (seeded for less heat)
- a couple of shakes of Bragg's Liquid Amino
- enough of a neutral oil to make it glisten
