Project 261-259: Sugar Snap Peas with Ginger and Sesame

This is a fast way to get veggies into any meal or just to have on hand as a snack. I make a giant bowl of this salad and it only lasts two days. That crunchy snap with the savory toasted sesame and bite from the fresh ginger are hard to resist. 

I buy a big bag (or two) of snap peas which are already cleaned and relieved of their strings. These go into a very large bowl along with:
  • a teaspoon of toasted sesame oil
  • at least a heaping tablespoon of fresh ginger, minced (or diced or grated)
  • a small clove of garlic, minced
  • a sprinkle of sesame seeds, to your liking
  • a heaping tablespoon of Fresno chile, diced (seeded for less heat)
  • a couple of shakes of Bragg's Liquid Amino
  • enough of a neutral oil to make it glisten
Toss it all then taste. You might have to readjust. I usually end up adding more ginger. Keep this in the refrigerator and you will not be sorry.
