It's Hatch chili season. I'm partial to the ones with a lot of red. I took these, the leftover jalapeños and some sweet bell peppers and tried my hand at pickling them. We'll wait and see how it turned out. In a couple of weeks I'll test a jar. If they're good, I'll pass them around as gifts. If they suck, I'll cut my losses and use the jars to can something else.
