Guacamole Without The Superbowlay

The second best thing about the Superbowl is that avacados are on sale everywhere. I love them. I love that they are good for me. I love how they taste and how they feel. I love them in all sorts of recipes but today let's just make the classic avacado stand-by...guacamole.

The simplest way to make guac is to coarsely chop your avacado and mash it with a few tablespoons of your favorite salsa. Now, before you purists take umbrage, just listen. We all have a salsa we like best and the basic ingredients for salsa are also the basic ingredients for guac. This simple recipe is really tasty.

If you want to make it from scratch, so to speak, here's what you do:
  • coarsely chop the avacadoes into a good-sized bowl
  • add one tomato, cored, seeded, and diced
  • add half a medium-sized white onion, diced
  • add one jalapeno, seeded and de-veined (or one or the other or neither depending on your tolerance for heat)
  • add the juice of half of a lime
  • add coarse salt to taste
  • fold all ingredients together
Oh, the first best thing about the Superbowl? I didn't have to watch it.
