Cool Cucumber Salad
Cucumbers. Cool and crisp. A wonderful addition to many different kinds of salads. But this recipe features cucumbers tossed with a sweet and zingy dressing. Salad: - 1 English cucumber, thinly sliced
- 1/4 cup diced red bell pepper
- 1/4 cup shredded carrot
- tbsp minced shallot
- tbsp minced cilantro
Combine all ingredients and toss to evenly distribute. Dressing: - 2 tsp toasted sesame oil
- 2 tsp honey
- 2-3 tsp mirin
- 1 tsp rice vinegar
- 1 tsp vegetable oil
- juice of one small lime
- salt to taste
Combine all ingredients. Toss with salad. Serve chilled. Try these optional ingredient ideas: - red chili flakes
- crushed peanuts
- flaked, unsweetened coconut
- thinly sliced scallions
