Cucumbers. Cool and crisp. A wonderful addition to many different kinds of salads. But this recipe features cucumbers tossed with a sweet and zingy dressing. Salad:
1 English cucumber, thinly sliced
1/4 cup diced red bell pepper
1/4 cup shredded carrot
tbsp minced shallot
tbsp minced cilantro
Combine all ingredients and toss to evenly distribute. Dressing:
2 tsp toasted sesame oil
2 tsp honey
2-3 tsp mirin
1 tsp rice vinegar
1 tsp vegetable oil
juice of one small lime
salt to taste
Combine all ingredients. Toss with salad. Serve chilled. Try these optional ingredient ideas:
red chili flakes
crushed peanuts
flaked, unsweetened coconut
thinly sliced scallions
